Stewed rabbit recipe: grandma style

The weather begins to change and those cravings for more copious dishes begin to arrive, like a good rabbit stew. That is why this is the recipe we are going to prepare today: a homemade stewed rabbit, to suck your fingers, like those prepared by our grandmothers.

With a medium rabbit, 3 or 4 people can eat, depending on the hunger of the diners. The sauce and the garnish that selections complete this delicious dish.

Rabbit stew, step by step

Learn to prepare step by step this delicious rabbit dish stewed in the style of the grandmother.If they have a butcher who can help them with this task, so much the better. If not, then we will have to do it at home.
  • We will reserve the chopped rabbit, from moment, to enlist other ingredients that we will use. We will start with the onion: we will peel it and chop it in small cubes. We will do the same with garlic, but we will chop it into small pieces.
  • We will also peel and chop the carrot into thin wheels. In the case of the pepper, we will remove the branch, the white parts of the interior and the seeds, and we will chop it in julienne.
  • For now, we will reserve all vegetables.
  • The next step will be to heat a splash of oil in a large pan, to brown the rabbit pieces. We will turn them over so that each face takes a little color.
  • Once golden the pieces, we will reserve them in another container, and we will add a little more oil, to make a sofrito with the onion and the garlic. We will cook them a few minutes, until the onion turns slightly transparent.
  • Then we will add to the pan the carrot slices and the pieces of pepper. Let them cook for about 5 minutes.
  • Meanwhile, we will use a couple of tablespoons of the broth of vegetables or of chicken, to dissolve the flour or cornstarch. We will do this in a small separate cup to make sure that the flour does not form lumps, which will then be difficult to undo. We will reserve the result.
  • After the five minutes, we will add the mustard and the cream to vegetables. Then add a pinch of salt, another pepper and paprika, and mix everything very well.
  • In a pot, heat the broth, including the part where we had dissolved the flour. We will add to the broth the vegetables from the pan, a stream of wine, and also the rabbit pieces.
  • Then cover the pot and let it cook for 20 minutes.
  • After this time, we will try the sauce, and if necessary, we will correct the seasoning with more salt, pepper, paprika, or even another trickle of wine. We will also check that the meat of the rabbit is soft enough for our taste. If necessary, let the rabbit cook a few more minutes.
  • That's it. Our stewed rabbit is ready.
